Perfect Chicken Dinner I never order chicken when I go out to eat because I feel that great chicken dishes can be made at home. This hearty meal brings great flavors to the table to dress up everyday chicken dinner. Whip up this menu to "wow" even the harshest chicken dinner critics in your family!
Grilled Lemon-Herb Half Chicken 2 Half Chickens 2 oz Chef Haig’s Whatever Rub™ Chicken 2 Lemons 1 Large Onion 2 T Olive Oil
Season the birds inside and out with Chef Haig’s Whatever Rub™ Chicken
Grill or roast chicken until skin is golden brown or leg bone temperature is 160⁰ F
Slice onions in rings ¾” thick (about 4 slices per onion)
Rub onion slices in olive oil
Season onion slices with Chef Haig's Whatever Rub Chicken
Grill onion slices, flip once (they will become floppy, so be careful)
Cut lemons in half
Brush lemons with olive oil
Grill lemons just until marked
Serve Chicken with onions and a squeeze of grilled lemon
Country Baked Beans 6-8 strips Bacon ½ Onion diced 1 large can Baked Beans ½ c Brown Sugar
Cut bacon into 1 inch strips
Render bacon (cook until a little bit crispy, but not all the way crispy) and set aside
Pour off some of the bacon fat (or don’t!)
Sauté diced onion in bacon fat until translucent and aromatic
Stir in beans, bacon, and brown sugar
Simmer on medium heat for 20 minutes
Butter Braised Corncobs 4 ears of Corn ½ stick of Butter 4 pinches Chef Haig’s Whatever Rub™ Original
Shuck the corn
Coat corn in softened butter (either roll corn in butter or slather butter on by hand)
Sprinkle Chef Haig’s Whatever Rub™ Original on corn
Wrap each ear individually in aluminum foil (make it leak proof to keep all the goodness in)
Grill the corn for about 10 minutes, rotating frequently
Let corn cool before unwrapping (they are very hot coming off the grill)
Liberally sprinkle Whatever Rub on your Chicken
Slather the corn with butter, then work in Whatever Rub
